    Fat is awesome!!!! That's what I hate about grocery store steaks, they trim most of the fat because the average buyer thinks its bad. I like eating it. But its better if you trim it VS the store!

    Sashimi. Spice tuna cone. Chopped scallop rolls.

    First attempt. 140F, 55min, pan seared in cast iron, torched the bone to make it pretty. Came out pretty well but I think I'll try 135-136F next time. It took a bit longer in the skillet for the crust than I expected. Of course, it came with a healthy helping of pesto as well.

    Yep. Invest in a breaking knife & carve up steaks at home to your specifications. One of the best Xmas gifts ever from the wife. Can also save yourself a little moolah, if you buy the whole roast, loin, etc. and break it up yourself.

    Love spicy tuna cone. I remember that Man vs Food dude ate ten increasingly spicy tuna cones.

    Tonight was rotisserie chicken. Cooked two of them a few weeks ago. Reheated one tonight and served with couscous, tomato/goat cheese salad and some of the datil pepper salsa I made the other night.

    Very nice. What did you have in the bag with the pork while you were sous vide-ing it? Last time I did pork belly, I marinated in Coke and brown sugar and other spices. Caramelized nicely when cooked, made a good coating...T

    It was marinated in soy sauce, minced garlic, cracked pepper and a bit of onion powder. I let it sit in the fridge for a couple hours, then poured out all the excess soy sauce before sealing it up and putting it in the bath. I sprinkled a bit of baking soda (a VERY small amount) on each side before searing. It tends to really help with the crust.

    I didn't get the memo that it was F-chat wings day. Silly me, I'm making chili, albeit with a reboot I got from F-chat.

    This is my breaking knife. The cut resistant gloves are mandatory. This bugger is sharper than a scorned woman's tongue.

    Cut up a chuck roast into bite sized pieces. Brown. Sweat diced onions, diced bell peppers. Can of tomato paste. A bit of water. Pinto beans. Chili seasoning. Simmer for hours on end.

    Five hours down. More to go.

    I didn't get the memo either but I did cook wings today. They were still hooked to the rest of the bird though. :) Did two beer butt chickens at Dad's for family dinner. Came out pretty tasty. I brought the carcasses home and have started chicken soup. After having a couple more record breaking 90+ degree days last week it looks like this week is gonna be cool and possibly even rainy. Actually hit a couple sprinkles on the way to Dad's today.

    Chili looks tasty!!
