I got some rockfish fillets at Costco the other day in a big package. Split the pack up and fried some up tonight, froze the rest. Had coleslaw and these amazing potatoes that I adapted from a Lidia Bastianich recipe I saw. Throw a thin layer of pancetta on the bottom of the pan. She used potato wedges, I used fingerlings cut in half lengthwise. Roll the potatoes in a bit of oil and whatever spices, I used garlic, basil, salt and pepper. Roast, covered with foil at 425 for about 25-30 minutes. Then uncover and finish another 15-20 minutes or so. Yummy!!

That looks yummy. After all these years of having folks from New England fill my head with tales of the lobster roll, I had my first last year, when I was in Boston, and it was just OK. May have to cut to the chase and do my own. Hmm. Does Costco carry lobster? T

That's one of the simplest and best salads going. Love it. Tonight we did our once every other month or so "Breakfast for Dinner." A friend gave us two loaves of homemade brioche, so we thought, French toast!! Pain perdu if y'all wanna get high falutin. 😀 Eggs, cinnamon, brown sugar, milk, vanilla extract. Let the wash soak into the bread real good. Cook in a nonstick skillet, with a little bit of buttet to help the browning, until done. Maple syrup. A little powdered sugar. T
I like it because it makes it a tad more festive! Reminds me of the beignets at Cafe du Monde in Nawlins...T
French toast is pretty good. My aunt (by marriage) was French Canadian and would make it for us when we stayed at their house. She had relatives in Quebec that sent her syrup.
I like French toast. I made pancakes the other day for breakfast but added a twist and made them Bananas foster style. Cut up some banana, a little butter, brown sugar and a splash of bourbon. Pour over hot pancakes. Was tasty!
Busy morning. Decided to get the mutt fixed. Goes in at 830am and should be able to pick him up by 430pm. Its my B-Day, but it would be mean to leave the mutt alone. So I'll grab sushi take out. Do a dinner with the family over the weekend.
