I shared a large pepperoni pizza with my brother last night. It was UFC night. Drawback of having a big screen TV, everyone wants to come over and watch it. I'm probably heading to Eastern Washington State with my dad tonight. He's on a diet to protect against kidney stones. He's had surgery twice to remove them. Found a decent sushi bar on the way, so we'll do that tonight.
One of the kids who works for my wife was just diagnosed with kidney stones. What does your dad eat to protect himself? Mainly avoid green leafy vegetables high in oxalate? With the cooler temps, it's soup, stew and chili season in the kitchen. Whipping up a batch of cioppino (Italian fish stew). Turnip, leftover mushrooms, diced an onion - whatever was left over in the crisper. Herbs and spices. Mahi mahi, scallop, haddock and little pink shrimp. Would have liked to blitz some sardines or anchovies to fortify the broth, but none in the pantry. It's got a good bit more simmering to go. And, most importantly, it needs more garlic! Much more. Yesterday was BBQ Tri-Tip [Yuuuge], Ranch Style Beans, Green Salad. Topped with Salsa & Ranch Dressing in expected places. Today, Tater subbed for Beans. Lotsa butter & sour cream. Thanks @PureEuroM3. I made a bit different batch of soup tonight. A pound of ground turkey, several idaho potatoes, lots of carrots, zucchinis, another squash (confetti or carnival?), beets, ginger, fresh ground fennel and mustard seed, coconut cream, lemon and orange juice and their zest, coconut vinegar and sea salt. The BEST combo...I get a hunkering for that combo, especially if I get a cold/flu bug. Its the only good thing to come out of getting sick.
