My new go-to for ramen broth is ox tails. Simmer the tails in your favorite spices for about 4 hours. Cool overnight. Skim off the fat and any detritus, save the meat. Image Unavailable, Please Login Not the most elegant presentation but tasty. The dal was very good. Shrimp was done simply in S&P, olive oil and a little garlic. The rice - ashamed to admit - is minute rice. The dal hiding under the shrimp was red lentils, curry leaves, black mustard seeds, ginger garlic paste, shallot. Sweat the veggies and spices, add the red lentils, mix, add water, simmer until the lentils are tender. Finish off with a generous dollop of sambal oelek, mixy mix. Mangia! T
