For those better versed in winter driving (in Europe), whats the performance difference (and feel) in terms of driving "hard" on winter tyres (in say 2-8 degrees C) vs 20+ degrees C in summer.

The 488/Pista use winter tyres that are 285cm instead of 305cm and trying to gauge how much better 305cm summer tyres would feel?

Summer tires are night and day different for performance. The handling is 10 times better for one, traction is also greatly improved.

This is good as the car felt very "loose" and slippery on winter tyres at 3-5 Degrees C?
